Mum gave me this recipe as an entry when I made the family and friends cookbook for Caroline's bridal shower. She said it was one of Caroline's favorite, so I decided to make it. It was a big hit in our house too!
• 1½ lbs ground beef
• 1 small onion, diced
• ¼ cup green pepper, diced
• 2 to 3 large mushrooms, diced or sliced
• ¼ cup celery, chopped
• ½ to ¾ cup Italian bread crumbs
• 1 5.5-oz can of tomato juice
• 1 large egg
• 1 cup shredded cheddar cheese
Directions
Salt, pepper, and garlic powder to taste
Crumbled up CHEEZ-ITs on top
Bake at 350° for 45-60 minutes
I omitted the mushrooms, since I don’t like the little fungi.
Serve with mashed potatoes and gravy.
